Good Morning! Wake up and smell the cinnamon! Now most people wake up and want to smell the coffee or the bacon and there is nothing wrong with that. When I visit home and am the early riser, I know it is my job to start to coffee so my mom will wake up and join me in the living room. I love this little trick to steal some time with her. For me, my favorite wake up call is when Kevin has started the avocado toast or protein waffles!

Both breakfasts leave me feeling full, but fueled. There is nothing worse then grubbing down a greasy breakfast and feeling like you cannot do anything for the next few hours. Needless to say, Maddie needs me ready to go for her morning walk, she’s not willing to wait 3 hours until my stomach feels lighter. So today I am sharing my two favorite breakfast recipes, which Kevin & I actually made this past weekend.

Avocado Toast

Servings 2 people

Ingredients
  

  • 1 avocado
  • 4 whole eggs
  • 4 pieces Ezekiel 4:9 bread You can sub any of your favorite toast options
  • 1 avocado oil non-stick spray You can sub any non-stick spray or melted butter

Instructions
 

  • Cut the avocado in half and remove the pit. Then slice each half and season to your liking. I prefer salt & pepper or everything but the bagel seasoning.
  • Toast the bread in a toaster.
  • Spray a non-stick small pan with non-stick spray and warm on medium heat. Once warm crack 2 eggs onto the skillet.
  • Cook for 3 minutes, or until egg white is set. Flip and cook for 1 more minute.
    Note: This creates an over-easy egg, add 1-2 more minutes of cooking time for over-medium.
  • Follow this same process again, to cook the remaining 2 eggs.
  • Spread 1/4 sliced avocado on each piece of toast. Add a little more seasoning if preferred. Top with 1 over-easy egg on each slice of toast. Enjoy!

Cinnamon & Blueberry Protein Waffles

Servings 4 Waffles

Equipment

  • Waffle Iron

Ingredients
  

  • 4 scoops Arbonne vanilla protein powder
  • 1/2 cup almond milk
  • 2 whole eggs
  • 1/2 tsp vanilla
  • 1 tsp cinnamon
  • 1/2 cup blueberries

Instructions
 

  • Heat oven to 200 degrees.
  • Crack the eggs into a medium bowl and whisk. Then pour in the almond milk and whisk until blended.
  • Add the Arbonne vanilla protein powder to the wet mixture 1 scoop at a time, whisking as you add to incorporate evenly.
  • Add in the vanilla and cinnamon and whisk again. Fold in the blueberries to lightly mix without breaking. Leave a few blueberries aside if you wish to top your waffles with them as well.
  • Spray the waffle iron with non-stick cooking spray and turn on to heat. Once heated up, slowly add 1/2 cup of batter to the center of the waffle iron so it begins to spread toward the edge.
  • Before the batter fully reaches the edge of the iron, close and follow waffle iron cooking instructions. Mine has a light that is red while cooking and turns green when cooking is complete.
  • As you remove each waffle transfer to a cookie sheet and store in oven to keep warm. Repeat the process until all 4 waffles are cooked. Spray the waffle iron in between each waffle to avoid sticking.
  • Top with a few more blueberries & honey and enjoy!
