Cut the avocado in half and remove the pit. Then slice each half and season to your liking. I prefer salt & pepper or everything but the bagel seasoning.
Toast the bread in a toaster.
Spray a non-stick small pan with non-stick spray and warm on medium heat. Once warm crack 2 eggs onto the skillet.
Cook for 3 minutes, or until egg white is set. Flip and cook for 1 more minute. Note: This creates an over-easy egg, add 1-2 more minutes of cooking time for over-medium. Follow this same process again, to cook the remaining 2 eggs.
Spread 1/4 sliced avocado on each piece of toast. Add a little more seasoning if preferred. Top with 1 over-easy egg on each slice of toast. Enjoy!
