Protein Cookie Dough Balls

Edible protein cookie dough that tastes so delicious you will forget it's healthy!

Ingredients
  

  • 1 15 oz can chickpeas, rinsed and drained
  • 1/4 cup Arbonne vegan vanilla protein powder
  • 3 tablespoons almond butter
  • 1 tablespoon coconut sugar
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon Himalayan salt
  • 2 tablespoon dark chocolate chips

Instructions
 

  • Add chickpeas to a food processor and process until they start to smooth out. I find I have to use a rubber spatula to scrape down the sides in between pulsing.
  • Add protein powder, almond butter, coconut sugar, vanilla, salt, and process until dough forms.
  • Use a rubber spatula to spread the dough out inside the processor.
  • Add the chocolate chips and pulse 3-4 times so that they can disperse into the dough.
  • Remove dough from processor and roll into ball shapes. Size can vary, I make them with a heaping tablespoon so I get more out of each batch. Enjoy!
