No matter how old we get and how much the CDC warns us not to eat raw cookie dough, nobody can resist licking that bowl clean or shamelessly eating an entire spoonful in the process of making cookies. Or better yet, who is the person that “bakes cookies” just to have the raw dough to eat?

Kevin & I make these all the time to satisfy the sweet tooth craving. And this recipe can be trusted full proof! Because Kevin has a bigger sweet tooth than anyone I have ever come across. He literally cannot say no to a treat if he knows they are in our home & this trick has kept him satisfied.

This recipe does not need a lot of detail or explanation, let’s face it you clicked on this post because you love cookie dough and need a good reason to make it acceptable to eat everyday. That being said, the dough is made with chickpeas, which sounds odd, but chickpeas can be transformed into so many things! Protein Cookie Dough Balls

Edible protein cookie dough that tastes so delicious you will forget it's healthy!

Ingredients
  

  • 1 15 oz can chickpeas, rinsed and drained
  • 1/4 cup Arbonne vegan vanilla protein powder
  • 3 tablespoons almond butter
  • 1 tablespoon coconut sugar
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon Himalayan salt
  • 2 tablespoon dark chocolate chips

Instructions
 

  • Add chickpeas to a food processor and process until they start to smooth out. I find I have to use a rubber spatula to scrape down the sides in between pulsing.
  • Add protein powder, almond butter, coconut sugar, vanilla, salt, and process until dough forms.
  • Use a rubber spatula to spread the dough out inside the processor.
  • Add the chocolate chips and pulse 3-4 times so that they can disperse into the dough.
  • Remove dough from processor and roll into ball shapes. Size can vary, I make them with a heaping tablespoon so I get more out of each batch. Enjoy!
