I have only recently become a fan of lemon treats, but now that I am I cannot help but find anyway to enjoy them. Tricky thing is just because the treat is lemon flavored, doesn’t always mean they are healthier than chocolate.
This Easter I kicked off our morning with protein-packed lemon pancakes & they did not disappoint! Their lemon glaze was the extra punch of flavor to make any Spring morning a little brighter. Enjoy these delicious pancakes without the guilt, you and your muscles will thank you!
Lemon Protein Pancakes with Greek Yogurt Lemon Glaze
Ingredients
- 1/2 cup almond milk
- 2 whole eggs
- 4 scoops Arbonne Vanilla Protein Powder
- 1/2 tbsp lemon juice
- 1 tbsp lemon zest
Greek Yogurt Lemon Glaze
- 1/4 cup plain greek yogurt
- 1 tsp honey
- 1 tsp lemon juice
- 1 tsp lemon zest
Instructions
- In a medium bowl whisk eggs and almond milk until well blended. Add the lemon juice and zest and mix.
- Add Arbonne protein powder and whisk until smooth
- In a small bowl mix all lemon glaze ingredients together until smooth and set aside.
- Spray a griddle or sautee pan with nonstick spray and heat to medium heat. Add 1/4 cup of batter to pan into the center of the circle for symetrical pancakes.
- Heat until small bubbles occur in the batter, about 2 minutes. If you see a golden brown edge around the side they are ready to flip. Using a spatula, flip and cook for another 1-2 minutes.
- Serve the pancakes and top with the greek lemon glaze and lemon zest. Enjoy!
