Tostadas are meant to be messy! You can pile them with any of your favorite ingredients and enjoy every crispy bite.

Although they are extremely delicious there is nothing lady-like about eating a tostada, so chose wisely who you enjoy these with 🙂

A tostada is fairly simple… it’s a flat taco. Anything you love in a taco you can enjoy on a tostada!

You can top your tostada however you choose, but my recipe below makes a very simply plant-based crowd-pleaser. You can build any ingredients on top of this to make it your own!

Like I say with all my recipes, the meat will not be missed. These flavors give you everything without feeling weighed down.

In my opinion, the refried beans are the crucial ingredient. Think of them as the glue that keeps all your toppings in place.

Healthy Perk: you will not fry these tortillas. But nobody will know! They crisp up so perfectly under the low broil that you will wonder why you ever wasted the calories or oil burned arms on any other technique.

Veggie Tostadas

Servings 4 people

Ingredients
  

  • 8-10 corn tortillas
  • 1 can black refried beans
  • 1 can corn
  • 1 red onion, diced
  • 1 bell pepper
  • 4 tbsp avocado oil
  • 3 cloves garlic, minced
  • 1 tsp salt
  • 1 1/2 tsp ground cumin
  • 1 tsp garlic powder
  • 2 tsp Trader Joe's Everything but the Elote Spice Optional

Toppings

  • avocado or guacamole
  • salsa or pico de gallo
  • cilantro
  • shredded Cheese (dairy or vegan)
  • hot sauce

Instructions
 

  • Heat 2 tablespoons of oil in a skillet over medium heat. Once hot, add garlic, diced bell pepper, and diced onion. Season with salt, ground cumin, and garlic powder. If you have the Trader Joe's Everything but the Elote spice add 1 teaspoon to the vegetables.
  • Cook for 4 minutes stirring frequently until the onion is translucent & bell peppers are lightly browned. Turn heat to simmer.
  • Rinse and drain the corn. Season with a pinch of cumin, cayenne pepper, salt & pepper. Add to pan with diced onion and pepper. Stir to mix together, and let heat on low.
  • Add refried beans to small skillet & heat on medium low. Stir occasionally.
  • Prep desired toppings at this time.
  • Preheat to a low broil & position the oven rack at the top of the oven.
  • Add 2 tablespoons of oil & 1 teaspoon of Trader Joe's Everything but the Elote spice to a small bowl or ramekin. If you do not have this spice add 1 teaspoon salt to the oil. Brush both sides of the tortillas with the oil. Set tortillas on baking tray, making sure they are not crowded.
  • Broil for 2-3 minutes on each side, or until light brown and crispy. Watch closely so they do not burn, this can happen quickly in the broiler. Set aside.
  • To serve, spread the refried beans on top of the tortillas. Top with sauteed vegetables. Add any additional toppings you selected.
  • Serve & enjoy!
