Kevin & I just returned from Bandon Dunes Golf Resort in Oregon. This golf resort blew us away with the Oregon coastline views, 6 rugged, wind-swept links styles golf courses, acres of untouched nature, baby deer and local Pinot Noir!

True links style courses are hard to find throughout the world, and Kevin was lucky enough to experience 4 of them in one day. Even with all the wonderful views and golf courses, being a foodie, what I cannot stop thinking about are the Protein Balls sold in the Old MacDonald pro shop.

Now that I am home, I am creating my own version so I can enjoy them every day! You can mix in any of your favorite flavors, such as coconut or mini chocolate chips, into this recipe and just increase the peanut butter and honey to achieve the correct dough texture.

Peanut Butter & Mixed Nuts Energy Bites

Equipment

  • Food Processor

Ingredients
  

  • 1 1/2 cup unsalted mixed nuts I used pistachios and almonds
  • 2 tbsp chia seeds
  • 1/4 cup sunflower seeds
  • 1/4 cup Arbonne vanilla protein powder
  • 2 tbsp honey
  • 3/4 cup peanut butter

Instructions
 

  • Add nuts to the food processor and pulse until broken up into small pieces. Add in sunflower seeds, chia seeds and Arbonne protein powder and pulse one more time.
  • Add in honey and peanut butter and blend on low until dough texture forms. It may require you to slowly add in a little more honey and/or peanut butter to create the correct texture.
  • Remove the dough and add to a bowl. Form the balls in your hand and add to an airtight container. Store in the refridgerator.
